WEEKLY MINI MEAL PREP: Greek Salad & Chia Blueberry Oats

GREEK SALAD:


Ingredients:

  • 1 cucumber chopped

  • pint cherry tomatoes, halved

  • 1 can chickpeas

  • 1/2 C chopped artichoke hearts

  • optional pepperoncinis

  • Tb olive oil

  • juice of a lemon

  • fresh parsley, chopped

  • fresh dill, chopped


OVERNIGHT CHIA BLUEBERRY OATS


*serves about 3

Ingredients:

  • 1 C gf organic oats

  • 1 C milk of choice

  • 1 C blueberries, smashed at the bottom

  • 1/4 C chia seeds

  • 1/4 C hemp seeds

  • Tb maple

  • dash cinnamon

  • optional scoop of collagen or protein powder (which clearly would be quite processed, so I left it out)


Simply combine everything together and allow to sit for at least 30 min, but best overnight! Top with banana slices and chopped walnuts. Stays well for 4-5 days.
