Recipe: Chia Pudding 3 Ways


    Chia pudding consists of chia seeds soaked in non-dairy milk then flavored and topped with whatever goodies your little heart desires.  It takes about 3 minutes to put together and is ready to eat just 10 minutes after soaking (although it is preferred to soak a couple of hours or overnight). The chia seeds expand and soften to create a nice gel-like texture that is so satisfying. You can also double or triple this recipe to make a larger batch that will keep well in the fridge for a couple of days. Packed with protein, vitamins, and amino acids, it is an awesome afternoon protein-pick-me-up, great for breakfast, and a nice guilt-free treat for dessert. Below are three easy and incredibly yummy ways to do chia pudding, but there are tons of different things you can mix in or top your pudding with, like stir in a teaspoon of matcha, or top with gogi berries or bee pollen. Once you try these recipes a time or two, get creative and discover your own amazing combinations.

The Classic: This is like your vanilla ice cream. Plain and simple but freakin’ delish.

Ingredients:

2-3 Tbsp organic chia seeds

½  cup of organic unsweetened coconut milk

½ cup organic unsweetened vanilla almond milk (or just 1 cup almond milk as sub for coconut milk)

1 teaspoon of raw organic honey (or just add a drizzle if you don’t want to measure)

1 teaspoon vanilla extract

Dash of cinnamon (I prefer a pretty aggressive “dash” but I’m obsessed with cinnamon)

Instructions:

1. Add all of the ingredients and stir.

2. Let soak for at least 20 minutes, but even better if they soak for a couple of hours or overnight.

3. Option to top with berries, banana slices, or shredded coconut

Sweet Citrus: If you love lemons, you will be all about this chia pudding. The creaminess from the coconut milk with the clean, tart taste from the lemon is amazing together. An equally good combination, is to use limes instead of lemon (Obviously ‘cause, “You put da lime in da coconut,” isn’t a song for no reason).

Ingredients:

2-3 Tbsp organic chia seeds

½ cup of organic unsweetened coconut milk

½ cup organic unsweetened vanilla almond milk (or just 1 cup almond milk as sub to coconut)

½ lemon’s juice (great with Meyer lemon but any lemon will do)

~¼ teaspoon lemon zest

Instructions:

1. Add all of the ingredients and stir.

2. Let soak for at least 20 minutes, but even better if they soak for a couple of hours or overnight

3. Option to top with fresh mint or chopped walnuts or cashews

 A Little Bit Nutty: Banana nut, chocolate nut, peanut butter chocolate. If you dig any of those combos you’ll be into this. There are a few different ways to put this one together, so do whatever it is that tickles your fancy.

Ingredients:

2-3 Tbsp organic chia seeds

1/2 cup of organic unsweetened coconut milk

½  cup organic unsweetened vanilla almond milk (or just 1 cup almond milk as sub to coconut)

1 Tbsp organic almond butter or peanut butter

1 teaspoon or a drizzle of raw organic honey

1 tsp cacao nibs

Instructions:

1. Add all of the ingredients and stir (you can stir in the cacao or save it to top at the end)

2. Let soak for at least 20 minutes, but even better if they soak for a couple of hours or overnight

3. Option to top with any or all of the following: banana slices, chopped nuts, more cacao nibs
