We are all about the cool, crisp, and refreshing summer produce. We talk about eating seasonally a lot, and one reason why is because it gives you more variety (both in flavor and nutrient content) and brings excitement back to the food you’re eating. It allows you to shift your diet, maybe get creative with your cooking, and keep healthy meals/salads fun and delicious so you don’t get bored.

We don’t fully prescribe 100 percent to any one diet lifestyle (i.e. vegan, keto, paleo), but we do love following a generally plant-based and, often, Mediterranean diet. We really enjoy all types of food and pull different great parts of various different “diet types” to eat in a way that works best for us, and one way of eating that we think is really beneficial is “Mediterranean” or “Blue Zone.”

In the summertime, it’s all about the cool, light, refreshing foods. We find that we (and mostly everyone) naturally gravitate toward meals like this naturally this season; it’s just what our bodies want! A fresh black bean salad totally fits the description.

This black bean salad is super easy and quick to throw together, because all you have to do is combine a few ingredients and you’re good to go. We love having this on hand in the fridge to add to salads, as a side in our bowl for lunch or dinner, as a taco topping, or simply as a dip— also making it great to bring to parties.

    It's Taco Tuesday, y'all. That means, shrimp tacos for dinner tonight. We want to make sure we are getting tons of veggies in at dinner time (and all the time), so we serve this up with a Chopped Salad that pairs great with the tacos. Salads can be boring. If you eat salads on a regular basis, they can get old. A great way to mix things up (note: the salad pun was intentional), is to switch up your dressing. Store-bought dressings are often high in sugar or contain questionable ingredients and preservatives. There are a few brands that are descent, but it is more interesting (and cost-effective) to make your own dressing.
