You officially have the newest, most delicious addition to Taco Tuesday, and it involves avocado. And if it involves tacos and avocado, you can't go wrong, right? We can't decide if this is a chunky salsa, a pico, or maybe like pico and guac had a baby, but we're just gonna go with avocado pico de gallo for simplicity’s sake. But this isn't your average pico.

I don't know about you, but we could literally dive into a bowl of this veggie-loaded lentil pasta. And did we hear pesto?  If there's pesto, we're in. This recipe is seriously one of the EASIEST we have on our blog, and it's so so good.

    The most satisfying plant based dinner there ever was. Chickpea penne in a sauce of thyme roasted butternut squash, dusted with pistachios. We've got all of the comforting goodness with none of the guilt. The chickpea pasta contains one ingredient-- chickpeas (we use Tolerant brand).      Whether it be Thai, Chinese, or Japanese, it’s all delicious in our book. It is also super easy to make healthy, Asian-inspired dishes at home. A Bare Staple meal is zucchini noodles, a.k.a zoodles, and they technically can be made with yellow squash, zucchini, or a mixture of both.      Acorn Squash are in season during fall and winter, so now is the best time to get the most delicious acorn squash. There are tons of things you can do with them, but a way to make an entire meal out of one of these guys is to stuff it! It takes about 30 minutes to make and tastes amazing.
